1) I like food.
2) I don't like feeling hungry.
So I'm looking for some healthy recipes - either for meals or for desserts. If you have any you'd be willing to share, I would so appreciate it! I'm not trying to imply that you should be on a diet. You look great, really. I just thought that maybe you might have some healthy recipes.
Ahem...moving on....
To get the ball rolling, here is a healthy recipe I've been enjoying lately. It's from a weight watchers cook book:
Moo Shu Beef Lettuce Wraps
cooking spray
4 oz. uncooked lean ground beef (with 7% fat)
1/4 cup thinly sliced yellow onion
2 tsp minced fresh ginger root
2 tsp minced garlic
1/4 cup thinly sliced bok choy
1/2 cup thinly sliced red pepper
1/2 cup thinly sliced button mushrooms
2 tsp low-sodium soy sauce
2 leaves bibb lettuce
Coat a large nonstick skillet with cooking spray and set pan over medium-high heat. Add beef, ginger, and garlic; cook until beef is browned and onion is soft, breaking up meat as it cooks, about 5-7 minutes. Add bok choy, pepper, mushrooms, and soy sauce; cook, stirring occasionally, until bok choy is wilted and pepper is tender-crisp, about 3-5 minutes. Spoon about 1/2 of beef mixture into each lettuce leaf.
(Serves one)
To serve 4, increase quantities to 1 lb beef; 1 cup chopped onion; 2 Tbsp ginger; 2 Tbsp garlic; 1 cup bok choy; 1 bell pepper; 2 Tbsp soy sauce; 8 leaves lettuce.

Those lettuce wraps smelled good when you made them the other day! Delicious! I don't have any good recipes to give you (yet) but will if I find any here in NYC! P.S. You look great, too!!!
That sounds absolutely delicious and I want to make it! Now about my healthy recipes, somehow I always end up making them unhealthy by adding stuff so I wouldn't be much help but I love Patti LaBelle's oven baked (tastes like fried) chicken.
I have a few good ones. I'll find them and e-mail them to you.
That lettuce wrap recipe looks great!
Ready for the longest comment ever? Here is my recipe that never fails and is super healthy and hearty:
Tortilla-Lime-Chicken Soup
3 cans low-sodium chicken broth
2 chicken breasts, cooked and cubed
2 cans black beans, drained
1 can Great Northern beans, drained
1 can diced tomatoes with green chiles
1 small can chopped green chiles
1/2 onion, diced
1 clove garlic, minced
2 squirts hot sauce (Sriracha Chili is the best), or to taste
dash of salt
1 tsp black pepper
2 tsp chili powder
2 tsp oregano
1 tsp cumin
1/4 cup lime juice
1 lime, cut into wedges
1 avocado, diced
tortilla chips, crushed
Monterrey-Jack cheese, shredded
cilantro, cut into sprigs
1. Sautee onion and garlic with cooking spray in a large pot over medium heat until onion turns clear and gets tender.
2. Add chicken broth, beans, tomatoes, and green chilies. Simmer for 30 minutes.
3. Add all spices. Simmer for 10 minutes.
4. Remove from heat. Add lime juice.
5. Serve garnished with avocado, lime wedges, crushed chips, cheese, and a sprig of cilantro.
Serves about 8.
